Protein and Umami

1 serve of nori (approx 100grams) is about 41% of protein, making Nori a rich source of Protein. It is highly popular amongst vegans as it is a natural product and comprises a native element of japanese cuisine. Nori contains 3 Umami, glutamic acid (“Umami” flavor mainly contained in kelp), inosine acid ( “Umami” flavor contained in dried bonito flakes), and guanylic acid ( “Umami” flavor contained in shiitake mushroom broth). It is said that there is no other natural food containing all 3 Umami, but Nori. That is why it is so tasty with itself.

Vitamin C

Nori is rich in vitamins C which is often lacking in most cultivated plant-based foods. Vitamin C is needed for the growth and repair of body. The body is not able to make vitamin C on its own, does not store it either. Therefore important to include plenty of vitamin C-containing foods in your daily diet.

Vitamin A1, B1, B2

The fibre in Nori is said to be softer than those contained in vegetables, which has the added benefit of being more flexible causing less damage to the stomach/ intestinal, and synthesising vitamins via gut flora to remove any harmful amines and metals.
